Rack of Lamb with Parsley Bread Crumbs

Ingredients

2 Lamb Loin Racks

Clarified Butter

Dijon Mustard

Salt and Pepper

1 1/2 cups of fresh bread crumbs

3 cloves of crushed garlic

3 tablespoons of fresh parley, chopped

1 tablespoon fresh rosemary, chopped


For medium rare:

Place racks bone down in a shallow roast pan.


Place in preheated 425 degree oven for 15 minutes.


Remove from oven. Spread with mustard. Season with salt and pepper.


Mix bread crumbs and herbs. Pack on racks. Drizzle with clarified butter.


Return to oven for 6 - 7 minutes. Remove and cut between ribs to serve.
